Our Apple Cinnamon Coffee Cake is a multi-purpose beauty with lots of cinnamon chips floating throughout. And, what goes better with apples than cinnamon.
This recipe for applesauce cake is all ready for a coffee break, dessert for dinner, or a wonderful addition to a brunch. You're sure to find your own unique ways to add this Apple Cinnamon Coffee Cake to your repertoire.
Our apple coffee cake recipe can be drizzled with just a glaze, frosted from top to bottom, or as I prefer, topped with just thinned-down Cream Cheese Frosting.
Ingredients
1 cup (2 sticks) butter, softened
1 cup granulated sugar
2 eggs
1/2 teaspoon vanilla extract
3/4 cup applesauce
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1-2/3 cups (10-ounce pkg.) Cinnamon Chips
1 cup chopped pecans
Method
Heat oven to 350°F; grease and flour a 12-cup bundt pan.
Beat butter and sugar in a large bowl on medium speed of electric mixer until light and well blended
Beat in the eggs and vanilla extract, and mix in the applesauce.
Sift together the flour, baking soda and salt in another bowl.
Gradually add the dry mixture to the butter-sugar mixture, making sure they are well blended.
Stir in the chips and chopped pecans.
Put batter into your prepared bundt pan, and bake in the preheated oven for about 50-55 minutes, or until a toothpick inserted in the middle part, between the wall and tube of the pan, comes out clean.
Be careful to notice if the toothpick may just have hit one of the soft centers of a cinnamon chip and not the batter. The toothpick should be free of cake batter.
You could make a simple glaze with about 3/4 cup of powdered sugar and 1 to 2 teaspoons of water or milk.
I had a bit of cream cheese frosting left over from another project, so I thinned that down a bit and used it for my topping, sprinkled with some chips.
I prefer more of a frosting than a glaze. If you feel the same, please see our Cream Cheese Frosting Recipe. This recipe is enough to frost the whole cake, but if you just want a topping, you could cut the recipe down some. I always seem to find plenty of ways to use any that's left over, however.
