The name Apple Chipsters came about naturally because these cookies are just loaded with chips or bits of apple and a healthy dose of chopped walnuts. They are very moist and could be considered apple spice cookies.
I would say if you like "hermits," you'll love this cookie. The spices are a little more subdued giving the chipsters a more delicate, but nonetheless spicy flavor.
I nearly always sprinkle my cookies with a light coating of sugar before baking, and I continued this practice with the chipsters. Despite their dark color, the cookie is quite light and not terribly filling. I hope you'll make a batch and enjoy them with a glass of milk (my favorite with cookies) or maybe a cup of tea or coffee. You'll love these apple cinnamon cookies.
Ingredients
1/2 cup vegetable shortening
1-1/2 cups brown sugar, packed
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cloves
2 cups sifted flour
1 teaspoon baking soda
1 large egg
2 cups raw apples, finely chopped
1 cup walnuts or other nut, chopped
Method
Preheat oven to 400°F
Grease cookie sheet(s)
Beat together shortening, brown sugar, salt, spices and egg in large mixing bowl until fluffy.
Whisk together flour and baking soda.
Add dry ingredients to mixing bowl with apples and nuts.
Mix until all ingredients are incorporated.
The mixture will probably be dry. Add milk 2 tablespoons at a time until moistened.
Drop dough by tablespoon an inch apart on the greased cookie sheet(s).
Bake in preheated oven for 10 to 12 minutes.
This recipe yields about 4 dozen.
