Apple-Chicken-Rice

Apple-Chicken-Rice Skillet Dinner

This Apple-Chicken-Rice makes use of one of the newer flavors of Rice-a-Roni, their Chicken and Herb Classico. I'm sure that the recipe originated with the Rice-A-Roni people, but was adapted as years went by. Along with just a few more ingredients, we now have ourselves a genuine semi-homemade meal.

As with other recipes in our collections, my friend Audrey has kindly submitted this recipe as one of her favorites. I made this wonderfully-simple dinner recipe myself last night and will be very happy to add it to the site as one of my favorites, too. I can tell you the truth...there were no leftovers from the meal either.

This is one of the boneless chicken breast recipes and is easy to put together. Though it's quick, it lacks nothing in taste, however. If you would like to add a salad or a green vegetable to add a little color, the combination would look very nice on each dinner plate.

Ingredients

2 3.8 ounce packages of Rice-A-Roni, Chicken & Herb Flavor

4 medium-size boneless, skinless chicken breast halves

2 tablespoons butter, divided

1 cup apple juice

1 cup - 1 medium apple, peeled and chopped

1 cup sliced mushrooms

1/2 cup chopped onion

Method

  • In a large skillet over medium heat melt one tablespoon of butter, to which you will add the chicken breasts.

  • Cook about 2 or 3 minutes on each side, or until brown. Setthe chicken aside on a plate.

  • In the same skillet, saute the rice in the remaining one tablespoon of butter.

  • Add both packets of rice seasoning.

  • Be careful with this one...Slowly add 1-1/4 cups of water, apple juice, apples, mushrooms and onion...no need to saute the mushrooms and onions first.

  • Bring this to a boil and place the chicken on the rice mixture.

  • Reduce the heat to medium low and cover; simmer 15 to 20 minutes or until chicken is done. Rice will be tender

  • Let stand 5 minutes and fluff the rice before serving.
