Apple Cake with Hot Lemon Sauce

I hope the photograph does this Apple Cake with Hot Lemon Sauce justice because it's truly a gem. My friend Audrey submitted this fresh apple cake recipe which was handed down from her Mom.I used three Granny Smith apples to make the cake and it was just laden with delicious chunks of apple from top to bottom. It tasted very much like I had used brown sugar to sweeten it, but there was only the one cup of white. Delicious. Even by itself, the apple cake would be a treat, but just add the hot lemon sauce and off it goes...out of this world. I can tell you this--I didn't need to find room in the refrigerator for the cake or the topping. This was absolutely gone in one day. Please give this Apple Cake with Hot Lemon Sauce a try...it's almost guaranteed to be a "keeper." The lemon sauce is mild and definitely does not take away the flavors in the cake. Enjoy.
Ingredients
1 cup sugar
1/2 cup vegetable shortening
1 egg
1 cup flour
1 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 or 3 apples, pared and chopped
Method - Preheat oven to 350°F and lightly spray either an 8-inch or 9-inch square pan.
- Cream shortening, sugar and egg together in a bowl and set aside.
- Whisk all dry ingredients together and add to the creamed mixture in small amounts at a time. Mix well.
- Gently add chopped apple to the batter and transfer to the prepared pan.
Our directions say to bake it for 25 to 30 minutes. However, there's a possibility that my oven wasn't calibrated correctly, but I had to leave mine in at least 10 or so minutes longer. The top of the cake will all be a medium brown color, and please be sure that a toothpick inserted in the center comes out clean.Taking those precautions, your cake should be wonderful.
While your cake is baking, make up your lemon sauce.

2/3 cup sugar
2 tablespoons cornstarch
1 1/4 cups boiling water
3 tablespoons and 1/2 teaspoon lemon juice
2 tablespoons butter
1/2 teaspoon salt
1/4 teaspoon vanilla
