Although the slice of bacon is hiding the chicken in the picture, it really is under there; and the addition of the bacon definitely does not overpower this dish.
I've often heard of the apple-cabbage combination, but adding the caraway seeds makes a delightful change from the norm.
We had this easy boneless chicken recipe for dinner last night, and we didn't even miss the fact that there were no potatoes or other starch to accompany it. We had a fruit, vegetable, and chicken...we didn't ask for anything else. I think you'll like this one.
Ingredients
4 slices bacon
1 cup chopped onions
1/2 cup celery
1 tablespoon butter
1-1/2 to 2 lbs. chicken thighs or small boneless, skinless chicken breasts
1 cup apple juice
1 teaspoon caraway seed
1/2 teaspoon salt
1/4 teaspoon pepper
1 small head cabbage, cut into 8 wedges
4 medium cooking apples; cut into 6ths
Method
In a Dutch oven, cook bacon until softened.
Add the chopped onion and celery and continue cookinguntil the vegetables are tender. Remove these from the pan and put aside for now.
Put butter in the pan and heat to sizzling. Brown chicken on both sides.
Reduce heat to medium, and put the ingredients that were removed back into the pan with the chicken.
Add juice, caraway seeds, salt and pepper.
Place the cabbage on top and cover so the cabbage will steam. Continue cooking, basting occasionally, until the chicken is fork tender and cabbage is done as you like it...crisply tender would take about 15-20 minutes, but I like it cooked a little longer.
Top with the apples, cover again, and continue cooking until apples are crisply tender or to your liking.
