Apple Brownies

These Apple Brownies have become a favorite in our household. Although they're not chocolate or what they call "blonde brownies," they stand out from the crowd because they're so moist, chewy, and good tasting.


To borrow a phrase from Dick Clark, who can deny that the main ingredient being apples would automatically take the recipe “right to the top of the charts." Oh my, I’m thinking of my old “Bandstand” days again...it must have been triggered by the “New Year’s Rockin’ Eve” program. Sorry about that.


Back to our apple brownies...my guess is that if you bake these brownies one night, depending on the size of your family, they will be gone the next. I know that if I brought a batch to work with me, there’s absolutely no doubt in my mind that I would be returning home with an empty plate. That's a good thing, though.



Ingredients

1/2 cup soft butter

1-3/4 cup brown sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1/3 cup chopped walnuts

1 cup chopped, peeled apples (any kind)

1/3 cup raisins


Method

  • Preheat oven to 350°F.

  • Grease a 13x9x2 pan.

  • Cream together the softened butter and brown sugar.

  • Add eggs, one at a time, beating well after each addition.

  • Add vanilla extract and mix again.

  • Sift all the dry ingredients together and add them to the butter/brown sugar/egg mixture.

  • Beat until mixture is smooth.

  • Gently fold in by hand the walnuts, apples, and raisins.

  • Spoon mixture into your prepared pan.

  • On middle rack of your oven, bake for 25 to 30 minutes.
