This Apple-Banana Bread simply combines the best of both worlds. It's almost difficult to find two fruits as popular by themselves and compatible with one another as apples and bananas. Whether you call it apple-banana or banana-apple bread, the taste tells you it's a great combination.
Our apple-banana bread is very moist, and the banana flavor does not overpower the apple taste at all...it's quite subtle actually. As I say, in combination, they can't be beat.
There are so many uses for quick breads...some serve them with coffee or tea as a break, as a "midnight snack" with a glass of milk, or even as a substitute for a sweet dessert. I particularly like to toast slices for breakfast or to put two slices together with a filling like cream cheese and jam for lunch.
However you choose to use them, our apple-banana bread recipe's moist goodness will not let you down. This quick bread recipe is a shining example of that.
Ingredients
1/2 cup butter, softened
1/2 cup brown sugar
1/2 cup granulated sugar
2 eggs
3 tablespoons sour cream
1 banana, mashed
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
2 apples of your choice, peeled and chopped
1/2 cup chopped walnuts
Method
Preheat oven to 350°F
Cream together the softened butter and both sugars.
Beat in eggs one at a time.
Mix in the sour cream, banana, and vanilla.
In another bowl, whisk together the flour, baking powder, soda and cinnamon.
Gradually add this to the butter mixture.
Gently stir in apples and nuts.
Spoon the completed mixture into a greased loaf pan and bake for about 60 minutes.
I happened to use one of those aluminum, disposable pans, which is a little smaller than a standard loaf pan. Just fill any pan two-thirds to three-quarters full...not too full.
If you have some batter left over, put it into aluminum muffin papers because they stand on their own. Put the bread and the muffins right on a cookie sheet. Then, just bake your muffins for about 25 or 30 minutes along with the bread. It was really nice to have a couple of banana-apple muffins we could enjoy while the bread continued to bake.
Each should bake until a toothpick inserted in the middle comes out clean...bread and muffins
