Amish Baked Oatmeal

This Amish Baked Oatmeal recipe is one that I have refined over the years, and I hope you enjoy this final version. It's true that when someone asks how to cook oatmeal, we could go on and on forever answering because oatmeal recipes abound. For our purposes today, however, I gave the most thought to convenience, taste, and ease of preparation. This is the baked oatmeal recipe I came up with. You can put all the ingredients together the night before, and it only requires about 15 to 20 minutes baking time the next morning. When we visited Pennsylvania, we took a tour through the Amish country. We had dinner in a typical Amish "restaurant," which reflected their closeness of family and friends. Food was served at long but unpretentious tables, with seating only on benches. The atmosphere is definitely one of love for family and friends. By the time your meals are finished, everyone at the table "knew" one another and there was much conversation going on. Wouldn't it be a plus if some of this camaraderie were to spread far and wide? Food is a central element in the lives of the Amish people because the men really do get together for barn-raisings while the wives prepare lunch and dinner for the "workers." Somehow I'm sure they would love this simple, but delicious Amish Baked Oatmeal that has been named in their honor.

Ingredients
2 cups of Old Fashioned Oats
1/2 cup light brown sugar
1/2 cup plus 2 tablespoons milk
4 tablespoons melted butter or margarine
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 cup maple syrup
1 apple, peeled and diced
1/2 cup walnuts or pecans, chopped (optional)
