Here we are into June and we've already experienced some of the hot weather we don't usually see until August. Could it be a prediction of summer days to follow? I hope you have plenty of fun, summer activities planned.

I always associate summer with the children being home from school and trying to include healthy snacks into their diets. This quarter, I've included a recipe for an "Apple Pie Smoothie" that is as delicious as it is healthy.

Most importantly, your kids will love it, and don't be afraid to serve it to adults, too. It will appeal to people of all ages. It's refreshingly-cool and a really different way to treat anyone to a lovely break in the day.

I've been busy adding new recipes to our Apple Recipes website, so without further chatting, I'll showcase a few that I know you'll like.

Here's the recipe for that Apple Pie Smoothie I mentioned earlier. It makes at least 2 to 3 quite generous servings.

Apple Pie Smoothie

Ingredients

2 red apples, cored, peeled and cut into chunks

1-1/2 cups apple juice or cider

1 teaspoon ground cinnamon

2 cups vanilla yogurt (I used fat-free)

2 cups ice

Method

Put all the ingredients into a blender and pulse until smooth.

If desired, top with whipped cream and sliced almonds.
