Apple Recipes With Good Taste
Hello,
It's nearly time for the "Wearin' o' the Green" so some of our recipes will reflect the St. Patrick's Day theme.
In Ireland, St. Paddy's Day is an annual feast day that celebrates St. Patrick the most famous of the patron saints of Ireland. It is generally celebrated on March 17th.
Although it is a national holiday in Ireland; and considered a "bank holiday" in Northern Ireland, many other countries consider it a public holiday. Among them are Poland, Canada,Australia, United Kingdom (excluding Northern Ireland), New Zealand, and the United States.
In our area of New England, we enjoy one of the largest St. Patrick's Day Parades in the United States. Our weather is usually "iffy" around March 17th, even if the parade is planned for the following weekend.
You know how it is in New England...if you don't like the weather, all you need do is wait a few minutes and it will likely change. We never stop hoping for a nice, sunny parade day, though.

Our Crock Pot Beef Brisket is a tasty and easy way to get the corned beef and cabbage on the table for St. Patrick's Day or any day. Why wait until next year to make this recipe...it's great any time of the year. Be sure to purchase your extra cut of corned beef now, and tuck it away in your freezer. Corned beef may not be available year 'round, and it could be pricey.
Our Shamrock Cake is all dressed up in green and would look great on your table. Underneath is a simple apple sauce cake recipe that will make fast work of the actual cake. Then you can do the "fun stuff," decorating.

This Baked Carrot Casserole is a wonderful accompaniment to any meal. It's colorful, nutritious, and tastes great...can't ask much more than that, right?
Here's a great recipe that is brand new, and I wanted to share it with my newsletter subscribers first. I was hoping you might find many uses for it with the upcoming spring holidays.
It's all ready for a coffee break, dessert for dinner, or a wonderful addition to a brunch. Please find your own unique ways to add this Apple Cinnamon Coffee Cake to your repertoire.
Apple Cinnamon Coffee Cake

Ingredients
1 cup (2 sticks) butter, softened
1 cup granulated sugar
2 eggs
1/2 teaspoon vanilla extract
3/4 cup applesauce
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1-2/3 cups (10-ounce pkg.) Cinnamon Chips
1 cup chopped pecans
Method
- Heat oven to 350°F; grease and flour a 12-cup bundt pan.
- Beat butter and sugar in a large bowl on medium speed of electric mixer until light and well blended
- Beat in the eggs and vanilla extract, and mix in the applesauce.
- Sift together the flour, baking soda and salt in another bowl.
- Gradually add the dry mixture to the butter-sugar mixture, making sure they are well blended.
- Stir in the chips and chopped pecans.
- Put batter into your prepared bundt pan, and bake in the preheated oven for about 50-55 minutes, or until a toothpick inserted in the middle part, between the wall and tube of the pan, comes out clean.
- Be careful to notice if the toothpick may just have hit one of the soft centers of a cinnamon chip and not the batter. The toothpick should be free of cake batter.
- You could make a simple glaze with about 3/4 cup of powdered sugar and 1 to 2 teaspoons of water or milk.
- I had a bit of cream cheese frosting left over from another project, so I thinned that down a bit and used it for my topping, sprinkled with some chips.
- I prefer more of a frosting than a glaze. If you feel the same, please see our Cream Cheese Frosting Recipe. This recipe is enough to frost the whole cake, but if you just want a topping, you could cut the recipe down some. I always seem to find plenty of ways to use any that's left over, however.

Oh, and don't forget those humorous times...did you ever have one of your dishes "hit the floor?" Did you ever have the most
wonderful squares in the world in the oven and forget to set the timer? That's how I found out that my smoke alarm was working just fine.
