I made this recipe for apple cake in its simplest form...just the moist apple cake topped with whipped topping; my taste-testers just loved it. Another suggestion might be to top the cake with vanilla ice cream and drizzle with caramel topping. Endless possibilities, aren't there?
Ingredients
3 egg whites
1-1/2 cup sugar
1 cup unsweetened applesauce
1 teaspoon vanilla
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
4 cups sliced, cored and peeled tart apples
Method
Preheat oven to 350°F.
Beat egg whites until slightly foamy; add sugar, applesauce and vanilla.
In a separate bowl, combine flour, cinnamon, baking soda and salt.
Add to applesauce mixture.
Spray with non-stick cooking spray, a 13 x 9-inch pan or other large round or shaped cake pan.
Spread the sliced apples on the bottom of your pan of choice.
Spread batter over the apples.
Bake 30 to 35 minutes in the preheated oven or until a toothpick inserted in the center comes out clean; cool on a wire rack; cut and serve with your topping of choice.
